Fact: Baby corn, the miniature vegetable that often stars in Chinese stir-fry dishes. Baby corn comes from regular corn. It can come from any number of different kinds of varieties, but it's just picked at a much earlier stage, before it's even been fertilized. With corn, what you're eating with a corncob is actually the female part of the plant.
Baby corn is mildly sweet and has a satisfying snap to it. The little guys, usually only a few inches long, are commonly used in Asian cuisine, including stir fries, curries and noodle dishes. If a dish lacks texture, baby corn provides a pleasant crunch without an overpowering flavor.
